THE WINE
Our Viridi’s more eco-friendly organic viticulture focuses on working the soil, natural fertilisation and the reduction of phytosanitary treatments, eschewing the use of any synthetic chemical products. VIRIDI, the Latin word for “verdant”, pays tribute to organic winegrowing savoir-faire and to this wine with its luscious fruit and lovely round character.
Appearance – Fairly intense ruby hue with purplish tints.
Nose – Intense and fruity. In its early youth, the nose is fresh with red raspberry fruit aromas and a hint of liquorice and cut hay. After two to three years of cellar-ageing, strawberry jam and gingerbread dominate the first nose, which then goes on to develop undergrowth and garrigue scrubland notes with a hint of violets.
Palate – When young, the wine is fresh and soft with loads of fruit. With age, the palate becomes very broad with a lovely finish and is underpinned by aromas of strawberry jam and undergrowth.

The vineyards are located in the commune of Sainte-Cécile-les-Vignes.
TERROIR
The vines for the VIRIDI are very much at home in the very stony, clay and sand soils (Lauzes and limestone pebbles) located at an altitude almost identical to that of Châteauneuf-du-Pape. They enjoy the benefit of our region’s very windy semi-Mediterranean climate. These soils lend the grapes a lovely structure. Organic winegrowing methods, without the use of synthetic chemicals, preserve biodiversity.
VINIFICATION & AGEING
The Grenache grapes are harvested earlier than in conventional (non-organic) winegrowing and will provide plenty of fruit and freshness. VIRIDI is produced in a very traditional manner. After being introduced into concrete vats, the grapes ferment naturally at a temperature of 26-28°C. Two pumping over operations per day, rack and return and a stirring of the lees (bâtonnage) are carried out during the alcoholic fermentation. We use very little sulphite in the production of this wine in order to fully comply with the specifications of organic viticulture. Malolactic fermentation, which is essential to red wines, is followed by 12 months of ageing in concrete tanks to develop a lovely roundness.

FOOD PAIRINGS
Enjoy as an aperitif, or with a fillet of beef, grilled poultry, poultry in a sauce or a gizzard salad. It will also pair very nicely with some fresh goat’s cheese with herbs.
