They are made up of two very different types of soil: grey marl and sand, creating fresh fruit and structure, and stony sandy clay terraces, creating lovely aromatic power. The hot, dry Mediterranean climate is ideal for the ripening of the Grenache.

VINIFICATION & AGEING

The soils are ploughed during the year. Extensive green work is carried out to reduce yields and thereby improve the quality of the grapes. The grapes are harvested by hand and transported to the winery in small containers to prevent any oxidation. They are then completely destemmed and undergo a 3-week maceration. The Syrah, Mourvèdre and Grenache wines are aged in French oak barrels (1/3 new, 1/3 previously used for 1 fill, 1/3 for 2 fills) and the softer Grenaches are aged in concrete tanks and 100-year-old foudres to preserve their fruit. The wine is bottled in the March after more than a year of ageing and a light filtration.

[/vc_column_text][/vc_accordion_tab][vc_accordion_tab title=”RECOMMENDATIONS”][vc_column_text]

SERVING

Serve at 17°C.

FOOD PAIRINGS

Enjoy the wine when young, paired with a rib of grilled beef, a grilled rack of piglet or a chicken stew with green olives.
