However, it also produces about 6% white wines of excellent quality. In order to create greater complexity and make the most of our winemaking capabilities and capacity, our Grenache and Roussanne grapes have been joined by some Bourboulencs and Clairettes from two partner winegrowers whose grapes come from the exceptional Rayas terroirs.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #b2254b;\"><strong>Appearance<\/strong> <\/span>\u2013 Bright, deep straw yellow hue.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #b2254b;\"><strong>Nose<\/strong> <\/span>\u2013\u00a0 Very complex and discreet. In its early youth, the nose is fresh with mineral and citrus notes. After one or two years of cellar-ageing, the first nose is dominated by notes of peaches and pears and then goes on to develop exotic aromas of ripe mango and a floral touch of jasmine and rose with a hint of gunflint.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #b2254b;\"><strong>Palate<\/strong> <\/span>\u2013\u00a0 When young, the wine is fresh on entry and continues with a nice balance between roundness and acidity set off by touches of citrus and minerality. After a year of cellar-ageing, the palate becomes rounder and more elegant with greater length and fat and complex aromas of ripe yellow fruit, flowers and citrus.<\/p>\n<p>[\/vc_column_text][\/vc_accordion_tab][vc_accordion_tab title=&#8221;LOCATION, TERROIR &amp; VINIFICATION&#8221;][vc_column_text]<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #b2254b;\"><strong>LOCATION<\/strong><\/span><\/p>\n<p style=\"text-align: justify;\">Ch\u00e2teauneuf-du-Pape, located between Orange and Avignon. The Grenaches and Roussannes come from Domaine Barville, a 15-hectare family-owned vineyard, and the Bourboulenc and Clairette grape varieties from the Rayas terroirs in the same AOC. The latter are very highly regarded.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #b2254b;\"><strong>TERROIR<\/strong><\/span><\/p>\n<p style=\"text-align: justify;\">&#8220;Les Hauts de Barville&#8221; is mainly produced on our Domaine Barville, which is located to the west of the village of Ch\u00e2teauneuf-du-Pape. Of the domaine&#8217;s 15 hectares, 2.10 hectares are used for the production of white wine.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #b2254b;\"><strong>VINIFICATION &amp; AGEING<\/strong><\/span><\/p>\n<p style=\"text-align: justify;\">The grapes are harvested when fully ripe and picked by hand very early in the morning to minimize the risk of oxidation. The grapes are destemmed and gently pressed (pneumatic press), then the juice is settled and fermented for two weeks. We do not carry out malolactic fermentation to preserve the purity of the fruit. The vinification and ageing processes continue for 6 months in stainless steel vats to ensure the wine will have a lovely, fresh character.
